<p>Iako se sladoled tradicionalno veže uz ljeto, najbolji deserti ne poznaju sezonska ograničenja. A kada u zimske dane poželite nešto osvježavajuće, ali s toplim, zemljanim notama – sladoled od kestena savršen je izbor.</p>
<p>Ovaj desert spaja kremastu teksturu i bogat, nježno orašast okus koji podsjeća na kesten pire, ali u elegantnijem, prozračnijem obliku. Prirodna slatkoća i blag okus kestena te njihova gotovo baršunasta tekstura čine ih idealnim sastojkom za sladoled. Recept za pripremu kod kuće vas čeka u nastavku.</p>

<p><strong>Domaći sladoled od kestena</strong></p>
<p><strong>Sastojci:</strong></p>
<ul>
<li>250 g kuhanih i oguljenih kestena (ili gotov kesten pire bez šećera)</li>
<li>250 ml mlijeka</li>
<li>200 ml vrhnja za šlag</li>
<li>3 žumanjka</li>
<li>100 g šećera</li>
<li>1 žličica ekstrakta vanilije</li>
<li>1 žlica ruma (po želji)</li>
<li>prstohvat soli</li>
</ul>
<p><strong>Postupak pripreme:</strong></p>
<ul>
<li>Ako koristite svježe kestene, zarežite ih i kuhajte oko 20 minuta, zatim ogulite i usitnite. U blenderu pomiješajte kestene s malo mlijeka dok ne dobijete glatku, baršunastu smjesu. Ohladite.</li>
<li>U posudi umutite žumanjke i šećer dok ne postanu svijetli i pjenasti. U loncu zagrijte mlijeko, vaniliju i prstohvat soli do točke prije vrenja, pa polako ulijevajte toplo mlijeko u smjesu sa žumanjcima, neprestano miješajući. Sve zajedno vratite na laganu vatru i kuhajte dok se smjesa ne zgusne – trebala bi obavijati stražnju stranu žlice.</li>
<li>U ohlađenu bazu dodajte kesten pire i rum, zatim dobro izmiješajte dok ne dobijete glatku smjesu. Kad se sve sjedini, umiješajte i vrhnje za šlag. Ostavite smjesu u hladnjaku barem sat vremena da se dobro ohladi.</li>
<li>Ako imate aparat za sladoled, prelijte smjesu i miksajte prema uputama dok ne postane kremasta. Ako nemate aparat, smjesu stavite u metalnu posudu i zamrznite, povremeno miješajući svakih 30–40 minuta tijekom prvih 3–4 sata kako bi se razbile kristalizirane čestice.</li>
<li>Poslužite kuglicu sladoleda uz topli čokoladni kolač, kekse od cimeta ili samo s malo šlaga i karamel preljevom. Za dodatnu aromu možete posuti malo kakaa, sjeckane lješnjake ili naribanu čokoladu.</li>

<p><strong>Priprema:</strong></p>
<p>Kestene operemo, zarežemo i kuhamo u vreloj i posoljenoj vodi dok ne omekšaju. Zatim ih ogulimo i stavimo na stranu. Meso narežemo na medaljone, debljine tri četiri centimetra. U tavu stavimo maslac, dodamo bobice kleka, listove kadulje te pržimo medaljone, na laganoj vatri, po tri minute sa svake strane. Zatim medaljone i listove kadulje maknemo sa vatre, na toplo mjesto. U tavu, na masnoću od prženja, ulijemo bijelo vino, dodamo kesten pire, začinimo solju i biberom i miješajući pjenjačom dinstamo dvije minute. Zatim dodamo kuhane kestene, umiješamo med, dodamo tučeno slatko vrhnje, promiješamo i poslužimo uz medaljone.</p>
